Pamid is a thin skinned red grape that was historically the most popular grape variety cultivated in the Thracian Valley of Bulgaria. The wine is made with as little intervention as possible: organic, hand harvested, and with no fining or filtering. Its bright red fruit is reminiscent of Oregon Pinot Noir, with an extra layer of herbaceousness. Pair it with hard smoked sausage and potato salad with a
